Trimming comes first because it's much easier to cut down individual clips to the part you need before combining them, rather than merging everything and then trying to isolate the useful sections from a longer combined file. Format conversion is genuinely the last step, applied to the final combined result, since converting early and then continuing to edit means converting more than once.
